Water is one of the most overlooked parts in the tea making process. Since tea is 99% water, let's take some care in making sure we are using the best water to prepare our little tea leaves for tea sipping. There is a saying in the wine world, "If you wouldn't drink it, you shouldn't cook with it." Simple enough...right? Well, I think a similar rule should hold true for water,
"If you wouldn't drink it, don't make tea with it!"
